Strawberry Pizza

Since strawberries are in full swing right now, here's what looks like a delicious desert using strawberries. If it's anything like my Grandma Miller's Blueberry Pizza, then it will make you drool.

Another fine recipe from the Happy Cookers Group - Kudos to Pa

Strawberry Pizza

6 tbsp butter, softened
1/2 cup sugar
1 egg
1/2 tsp vanilla
1/4 tsp almond extract
1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt

Filling:
1 pkg (8 ounces) cream cheese, softened
1/2 cup confectioners sugar
2 cups sliced fresh strawberries
1 cup sugar1/4 cup cornstarch
2 cups crushed strawberries

In a mixing bowl, cream the butter and sugar for two minutes. Beat in the egg and the extracts. Combine flour, baking powder, and salt. Gradually add to the creamed mixture and mix well. Cover and refrigerate for one hour. On a floured surface, roll the dough into a 13 inch circle. Transfer to an ungreased 12 inch pizza pan. Build up the edges slightly. Bake at 350 F. for 18 to 22 minutes or until lightly browned. Cool completely. In a mixing bowl, beat the cream cheese and confectioners sugar until smooth. Spread over the crust. Arrange sliced strawberries on the top. In a saucepan, combine the sugar, cornstarch, and crushed berries until blended. Bring to a boil. Cook and stir for two minutes or until thickened. Cool slightly. Spoon over the strawberries. Refrigerate until serving. Yield: 12-16 servings

R.I.P. Brad

Today we heard the bad news that Brad Delp, the orgininal lead singer to the band Boston had passed away. As most of you know (especially "the fellas") Boston is my favorite Rock-n-Roll band ever. Lots and lots of awesome memories.
